Traditional Meatloaf

Ingredients

500 g beef mince

400 g pork mince

1 onion, finely chopped

3 garlic cloves, finely chopped

2 carrots, grated

3 thyme sprigs, leaves picked and finely chopped

3 rosemary sprigs, leaves picked and finely chopped

1 egg

1 tablespoon Worcestershire sauce

1 cup breadcrumbs

1 teaspoon salt

1 teaspoon pepper

100 g tasty cheese, grated

½ cup tomato sauce (ketchup)

¼ cup barbecue sauce

Method

1.Preheat the oven to 200°C.

2.In a large bowl, combine all of the ingredients except the tomato sauce and barbecue sauce. Mix well with your hands to thoroughly combine. Press the mixture into two small loaf tins or one large loaf tin.

3.Combine the tomato sauce and barbecue sauce in a small bowl, then spread on top of the meatloaf.

4.Bake for 35–45 minutes, or until browned and caramelised on top and the meatloaf feels firm when pressed in the centre.

Serving Suggestion

Serve with mashed potatoes and gravy.

Storage & Reheating

Allow to cool completely before chilling or freezing. This dish will keep for up to 1 week in the fridge or 2 months in the freezer.

To cook from frozen, defrost overnight in the fridge. Preheat the oven to 180°C, cover the meatloaf with foil and bake for 30 minutes. Uncover and bake for a further 10 minutes or until the top is crisp.
